My beautiful friend Melissa brought us some zucchini she'd grown herself the last time she came up from Tennessee to visit. I set one aside for today, which is Sneak Some Zucchini on Your Neighbor's Porch Day. I don't have any zucchini to leave on my neighbors porches, but I thought the day appropriate enough to try my hand at zucchini bread!

I'd never eaten zucchini bread before - I'm such a picky eater it's ridiculous, but I'm trying to expand my palate as I get older. I'd been putting off trying it because frankly zucchini and a sweet bread just didn't seem to go together to me. So I was pretty surprised when this loaf turned out moist with hints of what reminded me of pumpkin bread. I loooooove pumpkin bread (bring of fall!!!!!).
I'd read plenty of reviews online that said the various recipes people were using were turning out really sticky...so I just busted out my trusty little cookbook that my grandparents gave to me back in August of 2001 when I moved into my first apartment by myself.
Again, let me refer you to my aforementioned aversion to zucchini... I think I might have shredded the zucchini a bit too fine, so next time I'll have a go at keeping the shreds longer.All in all a success!

Adapted from Kitchen Keepsakes & more Kitchen Keepsakes
3 eggs, well beaten
2 cups sugar
3 tsp. vanilla
1 cup oil
2 cups shredded zucchini (unpeeled)
3 1/4 cups flour
1/2 tsp. salt
1/2 tsp. baking powder
1 tsp. soda
1 tsp. cinnamon
1/2 cup nuts, chopped
Oh yum! I love zucchini bread, especially with some cream cream on top :) Did you get anything at the 127 yard sale?
ReplyDeleteMeagan - I dragged my husband to it for three days straight! Didn't buy that many things, just walked around. I'm posting pics of my finds in a bit. :) Can't wait to go back next year now that I know what to expect!
