I'm pretty sure I made it known that I was feeling extremely under the weather around Valentine's Day. Turns out even the most romantic of intentions fly out the window when you have your head hung in a toilet for three days straight. So I thought I would make a tiny portion of it up to my Mister by whipping him up a batch of yummy Chocolate Surprise Muffins (or Loooooove Muffins, as I like to call them).

The results were moist and delicious! I'd recommend heating them for a few seconds before eating to soften the chocolate chips up a bit. It only took us a couple days to demolish the entire batch, just the two of us. If we keep this up, we are going to need to start becoming much, much, much more active.

Recipe listed below (adapted from Favorite Brand Name Bake Sale Cookbook)
Chocolate Surprise Muffin Recipe
Filling:
1 8 oz. package of softened cream cheese
1/3 cup granulated sugar
1 egg
3/4 cup Semi-sweet Chocolate chips
Cupcakes:
2 squares unsweetened chocolate, melted and cooled to room temp.
1/3 cup vegetable oil
1 1/4 cups all purpose flour
1 cup granulated sugar
3/4 cup water
1 egg
1 teaspoon vanilla
1/2 teaspoon baking soda
1/4 teaspoon salt
Heat oven to 350
Beat cream cheese, 1/3 cup granulated sugar, and 1 egg until smooth. Stir in chocolate chips. Set aside.
Beat melted chocolate, oil, flour, 1 cup granulated sugar, water, 1 egg, vanilla, baking soda and salt in large bowl with wire whisk or fork until smooth.
Spoon half the batter evenly into 16 paper lined muffin cups. Top each with a heaping tablespoon of filling. Spoon the remaining batter evenly over the filling.
Bake 30 to 35 minutes or until toothpick inserted into center comes out clean. Remove from pans and cool on wire racks. Sprinkle with powdered sugar if desired.
